Ingredients
- 1 C Water
- 1 C Quick couscous
- 1 t olive oil
- (dash of salt)
- 1 t lemon juice
- 1 T dried mint leaves, crumbled and cleaned very carefully
- 1 can tomato, chopped
- 1 can tuna
- 1/4 C onion, minced
- 1/4 C celery, minced
- 1/4 C cucumber, minced
Preparation
- Heat water in microwave 2 - 3 minutes or until boiling (or hot).
- Stir in salt, olive oil, lemon juice, mint, couscous; stir continuously (2 - 3 min) until water absorbed and couscous solidifies.
- Stir in other ingredients.
- Chill in refrigerator.
