Quick Ratatouille
- 1 medium eggplant
- 1 medium onion
- 1 large clove garlic
- 1 T basil
- 1 C spaghetti Sauce
- 1 splash red wine
- Peel and cube the eggplant, 1/2" cubes.
- Chop onion.
- Mince garlic.
- Mix eggplant, onion, garlic, basil, spaghetti sauce.
- Open bottle of red wine (cab is good), let it breathe, test it well.
- Cook eggplant mixture in microwave - 5 minutes @ 100%, then 30 minutes @ 30%.
- Remove from microwave, add red wine.
- Test wine some more.
- Cook rice.
- Serve ratatouille over rice, with some sourdough bread, and more red wine.
