Black-Eyed Pea Salad

1 large tomato, seeded, chopped
1 green bell pepper, chopped
2 green onions, sliced
6 fresh mushroom, sliced
1 garlic clove, minced
2 16 oz cans black-eyed peas, rinsed, drained
1 cup diced celery
1 4 oz jar diced pimento

  • Combine all ingredients in large bowl.
  • Toss w/18 oz bottle Italian dressing.
  • Sprinkle w/cooked, crumbled bacon (about 4 slices) and half cup sliced green onion.
